What you need:
2 lbs. peeled raw shrimp
1 ½ cups dark beer (use Guinness)
2 cloves garlic, minced
2 tablespoons chives, snipped
2 tablespoons parsley, snipped
1 ½ teaspoons salt
½ teaspoon pepper
shredded lettuce
2 green onions, finely chopped
How to make it:
Combine all ingredients except lettuce and green onion in a bowl.
Cover, and refrigerate overnight, stirring occasionally.
Drain, reserving marinade.
Broil or grill shrimp 4 inches from heat until cooked and tender (about 2 minutes on each side, less if you have small shrimp), brushing occasionally with reserved marinade while grilling.
*Do not overcook or shrimp will become tough.
Serve on a bed of shredded lettuce, and top with green onion.
