Ingredients:
¼ cup low-fat mayonnaise
1 tbsp Dijon mustard
2 tbsp grated Parmesan or Romano cheese
4 Fish fillets, one serving each
2/3 cup crushed cornflakes cereal
Method:
In a bowl, combine the mayonnaise, mustard and cheese. Brush both sides of each fish fillet with the mixture. (Thaw frozen fillets first.) Coat well with the cereal crumbs.
Place on a greased baking sheet and bake in the oven 15 to 20 minutes or until the crust is golden brown and the fillets are tender.
