½ cup butter, softened
½ cup shortening
½ cup granulated sugar
½ cup lightly packed brown sugar
1 egg
1 tsp. almond extract
2 cups cake and pastry flour or 1 ¾ cups all-purpose flour.
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
½ cup chopped blanched almonds
Method:
Line cookie sheets with parchment paper or lightly grease with shortening.
In large bowl, cream together butter, shortening and sugars. Blend in egg and almond extract.
Combine flour, baking powder, baking soda, salt and almonds. Blend dry ingredients into creamed mixture.
Shape into small balls and place 2 inches apart on cookie sheets. Press with floured fork to flatten.
Bake in preheated 350 F oven 8 to 10 minutes or until lightly golden around edges. Carefully remove with spatula to rack to cool.
