* 1 lb - green beans
* 2 tbsp - olive oil
* 1/2 cup - silvered red onions
* 1/3 cup - salted cashews
Alison’s Additives:
* 1 package - Chicken Oxo
* bit of crushed garlic
* bit of lemon juice
* sprinkle of splenda (sugar)
Blanch green beans in a pot of boiling water for 5 minutes. Drain and immediately refresh in a bowl of ice-cold water. Drain and set aside.
In a large frying pan hat olive oil over medium-high heat for 30 seconds. Add onions, cashews and stir-fry for 2-3 minutes, ntil the onions are softened. Add cooked green beans, raise heat to high, and stir-fry actively for 2 to 3 minutes, until the beans feel hot to the tough. (Take care that you don’t burn any cashews in the process.) Transfer to a serving plate and garnish with chopped parsly.
Serve immediately.
