how i have done it all my life but- do everything the same except do not cut it off the tail. leave it attached and just flip it over and when wou remove the skin you have lots to hold on to.

pappy, cleaned a lot of salt water fish about the same way-perhaps, not has good, and patient as the professional in the film-but do the job. A thin sharp knife is great-some of the Rock fish this way, did use a pair of tin snips to cut off the dorsal barb first thing when first caught-which is poisonous, and will cause you a problem if you get nailed!
